Meet Chef Tony Tzelepis, Twaalfskill’s own fine restaurant Chef.




Meet Chef Tony Tzelepis.  Tony was last here in 2004 - 2005 when he left to open his fine dining restaurant, Ecce Terra in uptown Kingston, NY.   Ecca Terra was sold in 2012 and we are happy to see Tony back at the clubhouse. Tony has over 40 years in the catering business, first in Greece in the early 80’s and other places around the globe.  If you remember Salvucci’s on Rt 28, you may have experienced some of Tony’s cooking.  Having learned his craft from experience and from other culinary people, Tony likes to prepare mostly a Mediterranean cuisine which he considers “comfort food”  Mediterranean cuisine includes Greek, Italian and Middle Eastern flavors.  He points out that for many years, the Mediterranean diet is one of the healthiest (if not the healthiest) in the world, focusing on the freshest of vegetables, fish and meats.  Everything is prepared by hand and ingredients are carefully selected for freshness.  He grows his own herbs where possible and prefers them to dried varieties.  He uses only sea salt from the Mediterranean and the finest authentic greek style goat yoghurt.  Tony’s menu will change with the seasons to allow  for fresh, seasonable vegetables to be woven into gastronomical pleasures.  Whatever wonders Tony has planned for the menu, it will be sure to be HEALTHY as well as DELICIOUS.  Chef Tony is ready to cater to your party needs and will do his best to cook the menu YOU want!  Please call the clubhouse at 845.331.5577 and both Andrew and Tony will help you plan your special event.
